Tuna and Pasta Cheddar Melt recipe. marissabaker.wordpress.comI think I found the original for this recipe on a site for Campbell’s soup, but I changed its ingredients to add carrots and use this cream soup substitute from Center Cut Cook instead of canned soup. Haven’t tried the soup yet in any of my other recipes that call for cream of chicken, but I plan to. The texture is perfect, though the color and taste is a bit different.

2 tablespoons butter

3 tablespoons flour

1 cup milk

2, 5-ounce cans of tuna

1 cup shredded Cheddar cheese (about 4 ounces)

2 tablespoons dry bread crumbs

2 teaspoons butter, melted

Heat the broth and water in a 12-inch skillet over medium-high heat to a boil. Stir in the pasta. Reduce the heat to medium. Cook until the pasta is tender, stirring often. Do not drain.

Meanwhile, in a small sauce pan, melt butter over medium-low heat. Whisk in flour and let cook for 1-2 minutes. Slowly stir in 1/2 cup chicken broth, then 1/2 cup milk. Whisk until it begins to thicken. Let it simmer for a few minutes. Season with salt and pepper.

Stir the thickened soup, 1 cup milk and tuna into the skillet with the pasta. Stir in 1/2 cup of cheese, then sprinkle the rest over the top. Stir the bread crumbs and butter in a small bowl. Sprinkle over the tuna mixture and cook until the mixture is hot and bubbling.

My younger brother just tested up from his junior black belt to adult-level black belt in Tae Kwon Do, and these are the cookies he wanted to celebrate with. This recipe makes a huge batch of cookies — between 5 and 6 dozen — so there’s more than enough to enjoy here and to send with him to Tae Kwon Do class tomorrow.

1 1/2 cups butter, softened

1 1/2 cup sugar

1 1/2 cup brown sugar

3 eggs

3 Tablespoons water

1 Tablespoon vanilla

1/2 teaspoon salt

3 cups flour (half whole-wheat, half unbleached)

4 1/2 cups uncooked rolled oats

Mix sugar and butter in a large bowl with a wooden spoon. Stir in eggs, one at a time. Add water and vanilla, then stir to thoroughly combine.

Stir in salt, baking powder, and soda. Mix in flour, then add oats. Dough can be refrigerated, or baked immediately. Roll dough into balls and place on ungreased cookie sheets. Bake at 350°F for 8 to 10 minutes.

I found this easy, attractive chicken stir fry recipe on Pinterest. The original recipe, from Edible Mosaic, was for a Cabbage, Carrot, and Chicken Stir-fry that served two. I trippled the recipe for our family of 5, thinking my teenage brother would eat enough for two people. Turns out I was wrong — we had enough to feed 6 or 7 people. The left-overs were a great breakfast, though!

Cabbage, Carrot, & Chicken Stir-Fry

Marinade

3 tablespoons water

1 1/2 tablespoons sesame oil

3 tablespoons soy sauce

1 1/2 tablespoon rice vinegar

1 tablespoon honey

3 large clove garlic, minced

1 to 1 1/2-inch piece fresh ginger, grated

1 teaspoon sesame seeds

1/4 teaspoon pepper

1 1/2 lb boneless, skinless chicken breast, sliced cross-wise into thin strips

1/3 cup tapioca starch

2 tablespoons sesame oil

3/4 cup water

1 lb green cabbage, sliced into thin shreds

6 medium carrots, thinly sliced on a diagonal

2 green onions, thinly sliced

extra sesame seeds for garnish

slivered almonds (optional)

Whisk together marinade ingredients. Stir in the chicken and let it marinade for 5 to 10 minutes. Remove the chicken from the marinade, and reserve the remaining marinade for later use. Toss chicken with the tapioca starch.

Add the remaining 2 tablespoons of sesame oil to a wok or large skillet over high heat. Once the oil is hot, turn heat down to medium-high. Cook chicken in small batches in a single layer until browned, about 2 minutes on each side. Add more oil about halfway through cooking the chicken.

Once all the chicken is cooked, add the cabbage, carrot, reserved marinade, and 3/4 cup water to the wok or skillet. Scrape up any brown bits from the bottom of the skillet and toss vegetables with a wooden spoon. Cook for 3 to 5 minutes or until the veggies are crisp-tender, stirring frequently.

Turn off heat and add the chicken. Garnish with the green onion, more sesame seeds, and slivered almonds if desired. Serve over steamed rice.

When we started raising our own beef, I decided it was time to experiment. So one time when I was putting a roast into the crock pot, I just started dumping spices in, added some of that red wine vinegar that was left over from a salad dressing, and thickened it to make a gravy. This is the result. My brother, who can single-handedly eat 1/3 to 1/2 of the roast by himself, tells me this is one of his favorite meals.

1/2 cup tapioca or corn starch

2 cups water

2 cups beef broth

3/4 teaspoon Italian seasoning

1/2 teaspoon black pepper

3 cloves fresh garlic, minced

3 Tablespoons red wine vinegar

1, 3-pound roast of beef, unthawed

4-5 potatoes, cut

4-6 carrots, cut

In crock-pot, whisk the tapioca starch with about ½ cup of the water. Add the remaining water, broth, and seasonings. Whisk until thoroughly combined.

Place roast in the crock-pot. Cut enough potatoes and carrots to fill most of the remaining space in the crock-pot. Turn the crock pot on to cook at low or high heat (see below). Stir at least once in the first hour, to prevent starch from sticking to the bottom of the crock pot as it thickens.

Cooking times will vary between crock pots. As a general guide, cook on low heat for 6 to 7 hours, or until the meat is cooked through and falls apart. If speed is important, cook on high heat for about 4 hours. In this case, the roast will be less tender.

I posted a form of this bread before — trying to turn it into a lemon-almond loaf — but it’s this version that I keep going back to when I want to make a lemony quick bread. This bread has a light lemon flavor — not too sweet, not too lemony. When you bake it, it almost develops a glaze on the top. The original recipe baked it in one loaf pan, but I was having trouble getting it to cook through without burning the edges, and then the center of the bread got squishy. Baking it in two pans, or four mini-loaf pans as I did here, or seems to do the trick.

1 cup sugar

3 teaspoons baking powder

1/4 teaspoon salt

6 Tablespoons unsalted butter, melted

1 teaspoon vanilla

1 teaspoons lemon juice

2 Tablespoons poppy seeds

Mix together flour, pudding mix, sugar, baking powder, and salt in a small bowl. Set aside. In large bowl, whisk together the milk, eggs, and butter. Add vanilla and lemon and mix well. Grease and flour two 9x5x3-inch loaf pans, or four mini-loaf pans. Pour the batter into the prepared loaf pans and bake at 350°F for 35-45 minutes, or until toothpick inserted near the center comes out clean.

Allow loaves to cool in the pan on a wire rack for 10-15 minutes, then remove from pan to finish cooling on a wire rack. Allow to cool completely.

Turkey Sausage Chowder

Here in Ohio, we’re back to weather that would make a penguin shiver. The only decent thing to do is make pots of creamy soup for lunch and then curl up with a warm blanket, a book, and a cat. Or you could share the soup with the cat, which Tiger seems to think is a good idea. He’s taken to begging whenever I sit down to eat anything, even if he knows he doesn’t like it (such as scrambled eggs).

I’m not sure if there ever was an original recipe for this soup — I wrote it down while watching my mother throw ingredients in a pot. It’s tasty and easy to make, which is why it and Cheese Burger Soup figure so prominently in our eating habits this time of year.

Sausage Chowder

1 cup frozen peas

2 cups water

1/2 of a 13-ounce package of turkey sausage

1 teaspoon chicken base

2 teaspoons onion powder

1/4 cup all-purpose flour

black pepper and salt, to taste

a pinch of cayenne pepper

Place chopped potatoes, carrots, and peas in a large sauce pan. Add 2 cups water and bring to a boil.

Meanwhile, cut turkey sausage into cubes. Add sausage, chicken base, and onion powder when mixture in pot boils. Reduce heat and simmer till carrots and potatoes are done.

Add black pepper and salt to taste and a pinch of cayenne pepper. Turn up temperature to medium-high and stir regularly until the soup bubbles and thickens. Serve warm.
